Description: The nakiri usuba is a traditional Japanese knife form ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. With plenty of finger clearance over a cutting board, the Kumagoro Hachi Nakiri is a great choice to grab as a primary slicing knife in the kitchen.
Kumagoro Hachi knives are made by craftsmen in Sanjo, Japan using the time-tested traditional forging techniques of Japanese swordsmiths. The central core is high performing Takefu VG10 stainless steel. This steel, high in molybdenum, vanadium and cobalt, holds an incredible edge. Surrounding this hagane (inner core) are eight layers of soft, supportive steel called suminagashi or damascus steel. Each damascus pattern is the result of its unique forging process. The blade comes razor sharp and fully honed.
The handle is made from durable pakkawood. The resin impregnated wood is riveted to the tang and holds up beautifully in either a home or profession kitchen.
