Description: The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an ideal general purpose chef's knife. Whether chopping, mincing, slicing, or dicing, this knife will be your go-to knife. With its 10-2/3 inch blade, this gyuto will have enough reach for virtually any task.
Tsukasa Hinoura is a third generation bladesmith from Sanjo in Niigata prefecture, Japan. He inherited his family's trade name "Ajigataya," but is also creating his original knives under his "Tsukasa" brand. Since the age of 22, Hinoura has continued his pursuit for the absolute highest quality of craftsmanship, earning him praise even from other famed Japanese makers. The dedication to his art is personified by the beautiful flowing pattern of his twisted damascus in the blades. This knife is one of his rare “River Jump” series. It has been in a private collection and is in virtually new condition.
Unlike many bladesmiths, Hinoura-san never uses modern machines and pre-clad steels because he believes a traditional approach creates the highest performance knives. He hand forges the damascus cladding for his knives and water quenches his blades creating knives that have soul and passion.
The exquisite contrast on the Kiriba (blade bevel) leaves a smooth surface to glide through meats and vegetables while the upper portion of the blade is forge finished to help release food while slicing. Both the Mune (spine) and choil are rounded for added comfort and security.
The elegant blade is forged beginning with a Shirogami #2 core (hagane) and wrapped with wrought iron damascus forged in a slow half twist. The half twist (River Jump) is a pattern that Hinoura has become renowned for. It shows tremendous skill and visual impact. The steel is precision forged and tempered to Hrc 63 for a long lasting, keen edge. The blade is distal tapered for optimal balance and has an extremely thin, keen edge for the highest performance. Because the blade is forged from carbon steels, these knives must be dried after use to prevent rust or tarnish. We recommend using camellia oil for easier care.
The custom octagonal handle combines carbon fiber with an Arizona desert ironwood ferrule and brass spacer. Thin brass liners surround a red G-10 spacer.
Exquisite work from a maker who is exceedingly hard to come by.
