Description: Mastersmith Aaron Wilburn is equally well known for creating his high performing outdoor knives as his culinary masterpieces. This long chef's knife (270mm) is absolutely exceptional and immediately grabs attention. The chef's knife is the workhorse of the kitchen and the primary 'go to' knife for most cooks. The comfortable design is a fantastic multipurpose chopper. Whether slicing onions, chopping herbs, or finely mincing garlic, this chef's knife will get the task done.
The 10-3/4 inch blade has a perfect arc for chopping and slicing. The Ws pattern damascus blade incorporates 1084 and 15N20 carbon steels, forming intriguing damascene lines with beautiful contrast. The blade was then oil quenched three times. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. The deeply etched blade helps release food from the sidewalls.
The Japanese style handle is contoured for a sturdy grip in the hand. The shinogi handle has a ridge that travels along the right side. This presentation grade curly koa wood handle is designed for right handed use. An ancient bone ferrule forms the front of the traditional handle. By stabilizing the wood and bone, Mastersmith Wilburn ensures that the handle will hold up well to the heavy demands of either a professional or home kitchen.
This chef's knife is accompanied by a hand stitched leather sheath for use while transporting the knife.
