Description: Australian knifemaker Towball Weightman is a friend of Mastersmith Bill Burke. Weightman's knives are works of art that excel in performance. This utility knife shows his expertise and his understanding of chef's knife geometry really shines through.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 6-1/4 inch blade is formed from stainless damascus forged in Germany by Markus Balbach. The pool and eye damascus is immediately captivating. This steel combines low maintenance with high performance. This knife is perfectly balanced and is one that you won't want to put down. Both the spine and choil are perfectly rounded for a comfortable grip.
The traditional octagonal wa handle is formed from birdseye jarrah (Eucalyptus marginata). The warm toned wood has a tremendous underlying figure. A natural Micarta 'bolster' seals the front of the handle from absorbing water during use. By using stabilized woods, Weightman ensures this knife will hold up well to the high demands of either a home or commercial kitchen.
