Miller's attention to detail shines through this elegant kitchen knife. The 9 inch long blade is formed from premium Bohler ELMAX stainless steel, with a Rockwell hardness of 62. ELMAX provides the extreme edge retention, high strength, and toughness a hard-use knife demands. High wear resistance in a steel usually means low corrosion resistance, but not with ELMAX. With this advanced steel, you get both properties, which makes it an excellent steel for culinary knives.
The contoured handle is formed from Gabon ebony (Diospyros crassiflora) and set on a full tang. Red G-10 liners add contrast and assist the knife to adjust to temperature and humidity changes. This resilient wood holds up extremely well in the harsh environment of the kitchen. Brass pins and bolsters bring out warm tones in the natural wood. Like other kitchen knives, this knife should not be put in a dishwasher.
