This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 7-1/2 inches, it is easy to maneuver safely and effortlessly. This is a perfect choice for the chef that wants an ultra-high performing knife, yet wants the easy care of stainless steel.
The blade is formed from high performing SG2 damascus san mai. Super Gold II (SG2) powdered metallurgical (PM) steel is combined with the beauty of damascus. A high performing Takefu SG2 PM stainless steel core is surrounded by thin layers of stainless damascus steel. The resulting cutting edge is tempered to Rc 62 - 64 (very hard!) for exceptional edge holding, but is easy to sharpen due to the small grain structure. The incredibly small crystalline size of this PM steel results in superior edge holding when compared to nearly any other stainless steel used in the knife industry. The full flat grind provides a very efficient cutting geometry.
The handle is made from presentation grade black and white ebony wood (Diospyros malabarica). Black and white ebony is a very rare wood and exceptionally dramatic. Scales are set with a central mosaic pin and two stainless steel hidden bolt rivets. A 416 stainless steel bolster seals the front of the handle. Black fiber spacers separate the scales from the full tang. This assists the handle to adjust to temperature and humidity changes. The rounded handle is nicely sculpted for a secure, comfortable grip. This chef's knife is accompanied by a custom black and white ebony saya. The lock pin is engineered to remain on the saya so that it is not easily lost.
