Description: Paring knives are one of the primary knives used in the kitchen. They are a great choice for detail tasks - from taking the eyes out of potatoes to removing the heads from tomatoes.
Handcrafted by expert artisans in Seki City, Japan, Shun Premier knives combine elegance and functionality. A stainless steel VG-MAX center core (Jigane) is clad with 16 layers of SUS410 high-carbon stainless steel on each side. VG-MAX "super steel" is composed of carbon, chromium, cobalt, manganese, molybdenum, silicon and vanadium, resulting in a long-lasting, high-performance edge with easy maintenance. The hand-hammered finish (known as 'tsuchime' in Japanese) lends not only to the beauty, but reduces knife-drag and prevents food from sticking to the blade. The ultra-thin cutting edge is sharpened to 16° on each side. It is razor sharp.
The premium walnut toned pakkawood handle nestles comfortably into the curves of the palm and allows for a variety of comfortable and secure grips. Hand wash recommended.
