Description: This chef's knife was hand made by Sanetsu in Seki, Japan.
The hakata santoku is a traditional Japanese chef's knife and a fantastic multipurpose chopper. The Santoku style has quickly become the new favorite for chefs in the West. The traditional Japanese blade shape (called a hakata santoku) has slightly less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The clipped tip provides a strong, detail-oriented point. The Ka Jin Saku Hakata Santoku has a gentle roll off the tip compared to the large belly on a Western style knife, so it has to be lifted less, making cutting more efficient.
The blade was hand ground, combining a ZDP-189 stainless steel core with layered damascus sides. It is convex ground to reduce sticking and friction during cutting. The edge is a 70/30 grind. This nimble, perfectly balanced knife is sure to be a favorite in your kitchen.
The core of the blade is formed from legendary ZDP-189 stainless steel, hardened to 65-66 Hrc (extremely hard!), clad with softer stainless steel damascus. This technique, known as suminagashi san mai, produces a knife with a keen, durable, long lasting edge and exceptional beauty. ZDP-189 is an amazing powdered metallurgical stainless steel and is exceptionally high in carbon and chromium content. This creates a blade that has a superior, long lasting keen edge.
The Western style handle is made from natural stag set on a full tang. Front and rear stainless damsacus bolsters bring weight to the center of the knife as well as providing strength and durability. This ambidextrous handle is easy to grip and lasts a lifetime. Like other kitchen knives, this knife should not be put in a dishwasher.
The fit and finish on this knife is nothing short of superb. The spine and choil are well rounded and comfortable enough for a 12 hour day in a professional kitchen. The knife has a profile that makes it suitable for just about anyone. There is ample curve in the tip section for those that rock-chop and near-flat at the heel for those that prefer to push/pull cut. The tip of the knife is thin and deals well with delicate tasks.
