The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is suited to preparation of meat and may be used as a general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance just right. Whether slicing onions, chopping vegetables, or portioning meats, this Haburn gyuto is a perfect go-to knife in the kitchen. This petit sized gyuto will be light and nimble while still handling all daily chef knife tasks with ease.
This elegant Japanese-inspired chef's knife is Ian's sole authorship work. The stainless blade was forged to shape from AEB-L stainless steel. The resulting blade will have a keen, long lasting edge. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The distal tapered blade creates a perfect balance. A rounded spine and choil ensure the knife will be comfortable even after hours of use.
The handle is formed from spalted tamarind wood (Tamarindus indica). Tamarind grows in tropical regions throughout the world and is desirable for its sapwood that is highly likely to spalt. The Japanese-inspired half round, half octagonal handle is comfortable for both right and left handed users. It is octagonal at the top and rounded at the base. Many people find this to be the most comfortable of Japanese handle styles. A marble carbon fiber ferrule finishes the Japanese-inspired handle. The knife is well balanced and extremely comfortable to hold. This is a knife you won't want to put down!
