Description: Washington knifemaker, C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. While living in Seattle, he apprenticed under Mastersmith David Lisch. David's eye for design clearly shines through Luis' work on this tremendous slicing knife. Luis' past career as a chef provides him with an understanding of chef's knives that is rarely found in other bladesmiths.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade on this utility knife was hand forged to shape from W1 carbon steel. A mustard patina provides some rust resistance and tremendous beauty. The convex edge will assist with food release and the rounded spine provides comfort when using a pinch grip. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The bolster is fully integral to the blade. This technique has superior structural integrity and requires a particularly talented smith to forge this way in a custom setting. Luis' maker mark is shown on the top of the bolster.
The handle is formed from stabilized presentation grade curly maple. It is contoured for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. Stacked spacers made from black G10 help the handle adjust to temperature and humidity changes in the kitchen. This is a knife that you will not want to put down!
