Description: David Tuthill has been a blacksmith for many years, creating elegant ornamental work. Over the last few years, his attention to detail and skills in the forge have quickly brought him to create truly world class chef's knives.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef's knife. The long blade is perfect for slicing meats and proteins. The curved blade edge provents a great rock for chopping. Whether slicing onions, chopping vegetables, or portioning meats, this gyuto handmade by Tuthill is a perfect go-to knife in the kitchen.
The blade was forged from David's own Mountain Sky pattern damascus, combining 1080, 15N20, and 1095 carbon steels along with nickel details. The damascus pattern is a mixture of bold and detail, such that the blade is interesting both up close and from a distance. The deeply etched damascus and convex grind will facilitate better food release. The spine has been nicely rounded to accommodate a comfortable pinch grip. This knife is light and nimble. The distal tapered blade provides perfect balance. At 8 inches, it is easy to maneuver, yet large enough to get most any job done.
The ambidextrous Japanese-inspired half octagonal handle is faceted at the top and rounded at the base. This shape is among the most comfortable of traditional Japanese handle styles. The handle combines dyed and stabilized big leaf maple with a buffalo horn ferrule.
