Description: Brian Hanson is a local bladesmith located here in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
The gyuto is modeled after the French pattern chef's knife. This is the essential kitchen knife. Longer and slimmer than the santoku, it is the general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right. Additionally, this knife has plenty of finger clearance for the rocking chop needed to chop onions and other vegetables.
The mosaic damascus blade is forged from 1084 and 15n20 carbon steels to provide a long lasting edge. The damascus pattern is extremely engaging with lots of movement in the steel. The edges of the spine and choil are softened to provide a comfortable grip. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels, we recommend camellia oil to oil the blade and natural wood handle.
The bolster is fully integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
The ambidextrous Japanese inspired octagonal handle is dyed and stabilized maple burl. Spacers formed from brass and black G-10 create a pleasing transition between bolster and handle and will help the wood adjust to any humidity and temperature changes. This is a knife you won't want to put down!
