Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives.
The gokujo boning/fillet knife is perfect for deboning meat and removing bones from fish. Its slender, upswept blade will be great for filleting or removing silver skin from the meat. The arced blade (like a samurai sword) enhances the ease of a single pass cut to remove flesh from the bone. It is a strong and sturdy knife, used to cut meat away from the bone, but not for cutting through bones.
The blade is damascus forged from carbon steels by Randy Haas. A convex grind assists food release, minimizing suction when slicing more delicate, moist foods. The blade shows off the bold damascus pattern. Forselius designed this high performance knife to be tremendously light and nimble.
Handle scales are hand contoured dyed and stabilized birdseye maple. They are set on the full tang with brass and stainless Loveless style fasteners. By using stabilized wood, Forselius ensures the knife will hold up well to the high demands of either a home or commercial kitchen -- or even used out in the field.
