Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This chef's knife by Dale Miller is light, agile, and very easy to maneuver. There's just enough belly curve to enable rocking cuts, which just adds to its versatility. The tall profile provides plenty of finger clearance over a cutting board -- even for those with larger hands. This chef's is the work of Washington native, Dale Miller. Miller's attention to detail shines through the elegant kitchen knife. The blade was hand forged from high performing 26C3 carbon steel. The composition of 26C3 is similar to Hitachi shirogami (white steel). It is very clean with few alloying elements. The high carbon content helps the steel get very hard. Dale borrowed his heat treatment technique from the world of Japanese swords. The spine was coated with clay prior to quenching. The dramatic undulating heat treatment line is called a hamon. It shows the transition between the resilient spine, and the ultra-hard cutting edge. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The contoured handle almond burl, an exceptionally rare burl from Laos with wildly intricate figure. By using stabilized wood, Miller ensures that this knife will hold up well to the heavy demands of either a home or commercial kitchen. 10-12 coats of tru-oil builds up a protective layer on the wood and reveals the wood's natural beauty. An antiqued bronze bolster seals the front of the handle. Like other kitchen knives, this knife should not be put in a dishwasher.
