Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The hand forged damascus blade combines 1084 and 15n20 carbon steels to provide a high performance, long lasting edge. The damascus pattern is extremely engaging with lots of movement in the steel. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels we recommend using camellia oil to avoid rust and oxidation.
American elm (Ulmus americana) handle scales are set on red G-10 liners. A full tang ensures strength and durability. The thin profiled handle feels very nimble and easy to control. Like other knives, this knife should not go in the dishwasher.
