Description: C. Luis Pina is an exceptional bladesmith and specializes in kitchen knives. He apprenticed under Mastersmith David Lisch. Luis' past career as a chef provides him with an understanding of chef's knives that is rarely found in other bladesmiths.
The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
Luis began forging this integral paring knife starting with 1080 and 15N20 carbon steels. The fine patterned laddered Ws damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin for clean, perfect cuts.
The hand contoured handle is stabilized myrtle wood. It is shaped for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. Myrtle wood will hold up beautifully to hard use, though this knife would feel at home in most any collection. Alternating black and white G10 spacers assist the handle to adjust to temperature and humidity changes in the kitchen.
The bolster is fully integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith. Like other knives, this knife should not be put in the dishwasher.
