This chef's knife (gyuto) will be an exceptional multipurpose chef's knife. From mincing and chopping garlic or chives, to preparing full meals, this will be your go-to knife! The blade height gives plenty of clearance over a cutting board, while the 7-2/3 inch blade is easy to maneuver.
Tuthill forged the blade from his own highly complex mosaic damascus, combining 1080, 15n20, and 1095 carbon steels along with nickel. The dramatic pattern is extremely engaging and encourages further examination. The spine and choil are nicely rounded for comfort. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.
The ambidextrous Japanese-inspired half octagonal handle is faceted at the top and rounded at the base. This shape is among the most comfortable of traditional Japanese handle styles. The handle combines Macassar ebony with a buffalo horn ferrule and a nickel silver spacer.
