Description: Prior to starting Sea Rose Knifeworks, Sasha Rosenfeld was a professional cook in Seattle for 15 years. When he made the move from chef de cuisine to stay-at-home dad and part time prep cook, he began taking blacksmithing classing and forged his first kitchen knives in his backyard while he daughter was napping. In the fall of 2018, Rosenfeld stepped away from professional kitchens for good and opened Sea Rose Knifeworks.
This knife will be a perfect 'go to' knife in the kitchen. The 7-2/3 inch blade is a perfect size and shape to get most any task done exceptionally well. A gentle arc to the blade's edge makes this a perfect knife for both a rocking chop and a forward slice. Whether chopping onions, slicing tomatoes, mincing parsley, or portioning and slicing meats, this elegant chef's knife has you covered!
The blade was hand forged from W-2 carbon steel and features a hand rubbed satin finish. It features a plug weld made from damascus forged by Mastersmith David Lisch. The plug weld was pulled off perfectly, showing Sasha's tremendous skill at the forge. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The handle is hand contoured ringed gidgee (Acacia cambagei). Gidgee is an exceptional wood for knife handles and is considered to be one of Australia's most beautiful timbers. It has tremendous stability even when exposed to fluctuations in humidity and temperature. It is among the densest woods in the world and has a beautiful curl similar to Hawaiian koa. An integral bolster, while common in production knives, requires tremendous skill in a custom environment. The integral bolster helps bring the weight to the center of the knife. Black G-10 and stainless steel spacers will help the natural wood adjust to humidity and temperature changes in the kitchen. Like other knives, this knife should not be put in the dishwasher.
