This chef's knife is a perfect choice for slicing and chopping -- an ideal general purpose chef's knife. At 6-2/3 inches, this nimble knife will be easy to maneuver and control. The slim profile keeps the weight low and the balance perfect. This knife has a perfect shape for a rocking chop and is sure to be a go-to knife in your kitchen.
The forged W2 carbon steel blade features a meticulous hand rubbed satin finish. Borrowing from the world of Japanese swords, Brion coated the spine with clay prior to heat treatment. The clay acts as a heat sink, keeping the spine softer and supportive, while allowing the edge to be exceptionally hard. The undulating heat treatment line seen in the blade is called a hamon. W2 carbon steel is highly revered for its ability to hold an excellent edge coupled with good toughness and chip resistance. Brion's mark is on the left side of the blade.
The stabilized Hawaiian koa (acacia koa) handle is sculpted for a secure grip. This durable wood is only found on the Hawaiian islands and is one of the most desired woods used in knifemaking. The handle is heirloom fit to a G-10 ferrule which prevents water from getting into the handle. This knife is so light and nimble, you'll find yourself constantly reaching for it!
Excellent work throughout!
