Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its lightness, maneuverability and stunning good looks.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, or portioning meats, this will be your go-to knife.
The 7 inch blade is forged from a River of Fire damascus hand forged from 1084 and 15n20 carbon steels. This is a pattern that Bill invented and has become a hallmark of his work. The blade and tang are distal tapered providing a perfect balance. Both the spine and choil are nicely rounded for comfort. The blade is ground beautifully thin and will slice through foods with nearly zero resistance.
The handle is presentation grade ringed gidgee (Acacia cambagei). Gidgee is an exceptional wood for knife handles and is considered to be one of Australia's most beautiful timbers. It has tremendous stability even when exposed to fluctuations in humidity and temperature. It is among the densest woods in the world. The swirling figure nicely complements the damascus blade. Textured 416 stainless steel bolsters are perfectly dovetailed to the scales and offer a comfortable pinch grip.
