Description: This exceptional chef's cleaver is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
Meat cleavers are ideal for chopping down large cuts of meat, bone and hearty vegetables. Having a meat cleaver for heavier tasks ensures your primary knife used in the kitchen always stays in tip top shape.
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
Pau santo (Zollernia spp.) wood handle scales are set on the full tang for strength and durability. This rare wood has a figure and tone very similar to lignum verde. Handle scales are seated with three hidden bolt rivets. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by an edge guard to protect the edge during storage and transportation.
