A bunka is a Japanese general purpose chef's knife. Like the santoku, a bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's just enough belly curve to enable rocking cuts, which just adds to the bunka's versatility.
The blade is hand ground Bohler N690 and features a hand rubbed satin finish. It takes an incredibly sharp edge and holds onto it. Increased toughness gives it better resistance to edge chipping. Dave's touchmark is on the left side of the blade.
The frame constructed handle is inspired by the Japanese ambidextrous octagonal handle. The stabilized spalted maple has a dramatic figure. A black G-10 spacer and nickel silver bolster seal the handle from water. Like other knives, this knife should not be put in the dishwasher.
