Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This 10-1/2 inch chef's knife by Dale Miller is light, agile, and very easy to maneuver despite its larger size. This chef's knife has a straighter edge for efficient slicing, but there is just enough curve to enable rocking cuts, which just adds to its versatility. Whether slicing, chopping or dicing, this chef's knife is sure to be a favorite in your kitchen!
Miller's attention to detail shines through this elegant kitchen knife. The blade was hand forged from high performance 52100 carbon steel. Many knifemakers and metallurgists feel that 52100, with its small crystalline size, tremendous edge stability and toughness, is among the best carbon steels used in knifemaking today. Dale brought the steel to 63 Rockwell, ensuring a keen, long lasting edge. A hand rubbed satin finish adds an heirloom quality to the knife. Because this knife is forged from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The faceted handle is lignum vitae. This presentation grade wood is the hardest and densest trade wood. It has been used for everything from water-lubricated shaft bearings for ships to Merlin's wand in the Once and Future King, to Pete Seeger's trademark banjo neck; The natural wood is finished with 100% pure carnauba wax. Since lignum vitae is naturally waxy and repels water, this will give years of service with no on-the-surface finish to wear off. Alternating G-10 and Argentium silver spacers assist the handle to adjust to temperature and humidity changes. Besides making a more durable, harder and more pure alloy of silver, Argentium silver is tarnish resistant. A hand domed Argentium silver pin adds tactile contrast. The handle is nicely contoured a secure, comfortable grip, even after hours of use. Like other kitchen knives, this knife should not be put in a dishwasher.
Exceptional work throughout.
