When he combines his artistry with damascus with his skill at making kitchen knives, the results are truly exceptional!
This chef's knife is a perfect general purpose knife in the kitchen -- from chopping, to slicing and dicing, the chef's knife is a great choice. The long blade provides plenty of reach, combined with finger clearance over a cutting board. Whether slicing tomatoes, chopping onions, or mincing herbs, this gyuto will be a perfect choice.
The san mai blade combines dramatic laddered damascus sides (forged from carbon steels) with an ultra-high performance ApexUltra central core. ApexUltra is a revolutionary new steel developed specifically for handmade knives with thin, acute edges. It is a low alloy design that is forgeable, forge-weldable, and its fine carbides make the steel relatively easy to sharpen. With its high purity and well-balanced alloy composition it has very high toughness in the 66+ HRC range along with excellent edge retention. We recommend using camellia oil after use to avoid rust. A distal taper ensures optimal balance. The spine and choil are nicely rounded for a secure, comfortable grip.
The octagonal handle is inspired by traditional Japanese handles. Charred hickory is combined with a jet black micarta ferrule. Red, white and blue fiber spacers add just the right amount of contrast.
