Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
This high performance fillet knife is sure to become a 'goto' knife -- both in the kitchen and when out fishing. This beautiful knife is the right tool for two key tasks — boning and filleting. When boning, the narrow, sharp blade gets in close to the bone, making it easy to separate meat from bone. The extremely sharp edge even cuts through fibrous material with ease. It’s perfect for trimming the silverskin from a tenderloin or even making your own cutlets. The narrow blade reduces drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's 7-1/4 inch length is just right to glide through the body of the fish, quickly removing bones and skin. The knife has a semi-flex making filleting a breeze.
The blade is hand ground 14C28N stainless steel made by Sandvik in Sweden and heat treated to 59-60 Hrc. This provides the perfect compromise between long edge retention and a slight flexibility for getting into more delicate areas such as when removing pin bones from fish. 14C28N is tough, chip, resistant, highly corrosive resistant, and has good edge retention. The blade features a hand rubbed satin finish and a nicely rounded spine and choil for comfort.
Two stainless hidden bolt rivets set double dyed and stabilized maple burl handle scales to the full tang. Polished 304 stainless steel bolsters are fit to the scales in an elegant curve. The handle is extremely comfortable whether holding the knife in a pinch grip or holding the handle farther back. This elegant knife will hold up exceptionally well to the demands of either a home or commercial kitchen -- or even out in the field.
