Description: Like a chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
Ginyo chef's knives are hand forged by a craftsman in Eichizen, Japan. The Ginsan 3 (Silver 3) stainless steel core (hagane) is surrounded by layers of softer alternating stainless steels. At 60-61 Hrc, Ginsan ensures a keen, long lasting edge that is still easily sharpening able a sharpening stone and very responsive to ceramic honing rods. The blade is sharpened to a keen, razor edge. The spine and choice are nicely rounded and polished for a comfortable pinch grip. The many layered suminagashi sides are very dramatic. The ambidextrous convex grind provides effortless food release while chopping and slicing. The distal tapered blade (beginning with a thicker spine where the blade comes out of the handle and becoming progressively thinner as it approaches the detail-oriented tip) ensures perfect balance.
The octagonal "Wa" style handle is ambidextrous. The wenge wood (Millettia laurentii) culminates in a buffalo horn ferrule. Like other kitchen knives, this knife should not be put in a dishwasher.
