Description: Journeyman Smith Jim Arbuckle resides in Yorktown, VA. He started making knives in 1979 and has been forging knives since 1996. Growing up in Washington State, he spent most weekends hunting and fishing and has a great understanding of what features make a knife perform well. If you want a knife that is as attractive as it is useful, and don't want the typical off-the shelf chef's knives, then this handmade santoku is one you will want to check out!
This petit santoku made by Jim will be an exceptional multipurpose knife. From mincing and chopping garlic or chives, to performing paring tasks around the kitchen, this will be your go-to knife! The blade height gives plenty of clearance over a cutting board, while the three inch blade is easy to maneuver and control.
The blade is high performing, low care 154CM stainless steel and has an heirloom quality hand-rubbed satin finish. It was hardened and triple tempered to Rc 59-60 for excellent edge retention. The blade is distal tapered to lighten it and create a perfect balance.
The spine moves into a fileworked tang. Modified bamboo filework between the scales has been filled with black epoxy and polished. This gives the beauty of filework without the hassle of cleaning food particles out of it. Honduran rosewood handle scales are set on the full tang and will hold up well to the high demands of either a commercial or home kitchen. The handle is contoured with a deep choil - this semi-circular cut-out allows the forefinger to rest comfortably and makes the knife easy to hold in several different grip options.
Excellent fit and finish throughout!
