At 65 Hrc, Hitachi HAP40 offers a keen, exceptionally long lasting edge without the care of carbon steel. Though the cutting edge is very hard, the small grain structure of HAP40 makes sharpening and honing effortless. The core steel will form a patina slowly over time. The blade features a convex edge with a migaki finish. The ambidextrous convex grind provides effortless food release while chopping and slicing. The blade is impressively lightweight, making it comfortable, even after hours of use. The detail-oriented K-tip makes this chef's knife particularly efficient.
The octagonal, ambidextrous octagonal handle is oak. Like other kitchen knives, this knife should not be put in a dishwasher.
