Description: The bunka is a traditional Japanese general purpose chefs knife. Like the santoku, this comfortable design is a fantastic multipurpose chopper that has quickly become a new favorite for chefs in the West. The shorter blade is easily controlled, while the blade height gives plenty of finger clearance over a cutting board. Hayabusa chef's knives are made in Seki City, Japan and feature a high performance blade. The use of Ginsan steel brings an essential innovation to blacksmithing of knives by combining the qualities of high end steels with the rust resistance of stainless steels. Ginsan is sharp like shirogami, yet easy to maintain. The Ginsan stain resistant core is surrounded by softer low carbon stainless steel. This is a great choice for a home chef who wants high performance, easier care, or a professional chef that works in a high volume kitchen. It is hardened to Hrc 61 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to sharpen. A convex grind (hamaguri-ba) assists food to release from the side of the knife. The ambidextrous blade features a 50/50 grind. The distal tapered blade (beginning with a thicker spine where the blade comes out of the handle and becoming progressively thinner as it approaches the detail-oriented tip. The blade is impressively lightweight, making it comfortable, even after hours of use.
The octagonal "Wa" style handle is ambidextrous. Curly maple is surrounded by front and rear dyed and stabilized curly maple ferrule. Like other kitchen knives, this knife should not be put in a dishwasher.
