Description: This elegant chef's knife was made by Brent Stubblefield. Stubblefield is a native of Mobile, Alabama. He has lived with his family in Richmond, Virginia since 2009. He started as a hobbyist knifemaker in the early 2000s -- inspired by the combined skills of woodworking, metalsmithing, and leatherworking -- and founded Join or Die Knives in 2014. Join or Die Knives derives its name from Ben Franklin's famous woodcut published in his Pennsylvania Gazette in 1754. Franklin's message was that it takes vulnerability to be a community, which is why Stubblefield creates knives -- helping others to come together, build up, and grow stronger together. Stubblefield was featured in Season 2 of Forged in Fire.
Like other chef's knives, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this nimble knife will do it all.
The blade is satin finished Nitro-V stainless steel. Nitro-V is a martensitic stainless steel created by the New Jersey Steel Baron company. Nitrogen and vanadium were added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless. The Join or Die mark is on the left side of the blade.
The Japanese-inspired ambidextrous octagonal handle is stabilized maple burl. By using stabilized wood, Brent ensures the knife will hold up well to the harsh demands of a professional or home kitchen. The handle fills your hand nicely and accommodates a comfortable pinch grip. Richlite bolsters seal the front of the handle from water.
