Description: This exceptional chef's knife is the work of Kentucky bladesmith Joshua Fisher. Joshua is a full time knifemaker and a Forged in Fire champion (season 8, episode 23). He started making knives when he was 22 years old. He liked the idea of being able to take raw materials and make a functional tool that can be used every day. Joshua was honored to work with Wounded Warrior Project teaching veterans how to make knives, tomahawks, and other tools -- providing a unique experience and outlet for the veterans.
This chef's knife will be an exceptional multipurpose chef's knife. From mincing and chopping garlic or chives, to preparing full meals, this will be your go-to knife! The blade height gives plenty of clearance over a cutting board despite its shorter, more nimble 6-3/4 inch blade.
The blade is hand ground Nitro-V stainless steel. Nitro-V is a martensitic stainless steel with a chromium-based composition created by the New Jersey Steel Baron company. Nitrogen and vanadium have been added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless. The blade features a shinogi grind -- a transition in the grind provides exceptional food release. The Kiritsuke tip (sometimes called a K-tip), provides a detail-oriented point.
Burgundy burlap Micarta handle scales are set on the full tang for strength and durability. It provides a strong grip that doesn't easily become slippery. Torx screws secure the handle scales in place.
Exceptional work throughout!
