Description: Argentinian knifemaker Mariano Yannoni is creating some spectacular knives. Born in 1974, Mariano is proud to belong to a generation that has brought back custom knifemaking to his country. Mariano studies under renowned master knifemaker Miguel Ángel Gugliotta. Yannoni's knives are expertly made and show a tremendous level of craftsmanship. He brings his skills to knives designed for the outdoors, daily carry, and the kitchen.
The chef's knife is used for all-around food preparation. The arc of the blade edge is perfect for a rocking chop. Whether slicing, chopping, or dicing, this nimble chef's knife is a perfect choice. At 6-1/2 inches, the blade is long enough to get most tasks done, but remains nimble and easy to control.
The blade is 1095 carbon to ensure excellent edge holding and toughness. A differential clay zone heat treatment ensures a keen, long lasting edge. This heat treatment technique was borrowed from the world of high-performance Japanese swords. The spine was coated in clay prior to quenching. The undulating heat treatment line shows the transition between the softer, supportive spine and the ultra-hard cutting edge. Yannoni's touchmark is on the left side of the blade.
The handle combines Guayacan ebony with copper and carbon fiber spacers. Guayacan ebony is the wood of the Guaiacum, a genus of shrubs and trees with several species indigenous to the tropical regions of Central and South America. Guayacan is the hardest and densest traded hardwood. It is so hard that it does not float in water. It is perhaps no surprise that it will easily hold up to the heavy demands of either a home or commercial kitchen. The handle is nicely contoured so that it fits most hands.
A brown leather sheath allows the knife to be worn on the belt or keep it protected during transportation.
