Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives.
Sakimaru style slicers are used the same way as sujihiki -- they are perfect for slicing meats and fish -- but with a more dramatic shape. Its length allows the user to slice different types of protein in one single pulling motion making it particularly perfect for sashimi and nigiri sushi. The upswept blade culminates in a dramatic katana style tanto tip.
The blade was forged and ground by Tsunehis Hamono in the Tosa region of Japan. The Aogami 2 core is surrounded by mild steel. Aogami 2 ensures a keen, long lasting edge. The kurouchi forge finish helps prevent the quick formation of rust. Despite the 12 inch long blade, this knife is quite nimble and easy to control.
The handle combines a dramatic section of masur birch with bone. By using stabilized materials, Forselius ensures this knife will hold up well to the demands of either a home or commercial kitchen.
This Sakimaru Slicer is accompanied by a hand stitched leather sheath.
