Description: This Victorian Style Cleaver is an exceptional example of Raymond Richard's work. It has an elegance and timeless sense to it that wouldn't be out of place by the side of an American pioneer, bravely breaking ground in a new land. Whether processing large cuts of meat in a professional kitchen or breaking down whole animals out in the field, this cleaver has you covered.
The cleaver is hand forged W5 carbon steel and features an antiqued finish. W5 is a high carbon tool steel that provides the excellent toughness and durability that a cleaver needs. The blade is convex ground for better chip resistance and food release. A differential heat treatment line can be seen that separates the ultra hard cutting edge from a softer, more supportive spine. Richard's touchmark is engraved into the spine of the blade. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade and natural wood handle.
The oval shaped handle is cocobolo wood. Cocobolo, a true rosewood, is highly desirable for its luxurious red tones and high durability. The front and rear of the handle is sealed with antique wrought iron. Like other knives, this knife should not be put in the dishwasher.
