Description: Pieter van der Bank of PVB Knives is a bladesmith from the small town of Heidelberg located in the Western Cape of South Africa. Pieter has been hand crafting unique kitchen knives since 2016 and focuses on both European and Japanese-inspired chef's knives. His fit and finish is excellent and his understanding of chef knife geometry is equally well thought through.
The paring knife is the second of the most essential kitchen knives every cook should have on hand. After a chef's knife, you need a paring knife. It's perfect for any paring task, from hulling strawberries to peeling an apple. It also handles jobs such as chopping small foods, like garlic cloves or ginger, against a cutting board. The 3-1/2 inch blade is the perfect length for most jobs.
The hand forged blade is 1095 carbon steel to ensure a keen, long-lasting edge with chip resistance. The top of the blade is forge finished, helping release food from sticking to the side of the knife. Pieter's touchmark is on the left side of the blade. We recommend using camellia oil to protect the carbon steel blade and wood handle.
The Japanese-inspired ambidextrous octagonal handle is wenge wood. A curly mango wood ferrule and dyed and stabilized maple spacer add contrast. Like other knives, this knife should not be put in the dishwasher.
To protect the knife during transportation and storage, a hand built custom saya made from beechwood with a padauk pin is included.
