Description: Martin Huber hails from Austria and is considered one of the greatest chef knife makers from that region. His father, mother, and grandfather all had blacksmithing and metalworking experience which led to Martin learning the trade at a young age. Martin took four years of formal blacksmith instruction in his home town of Steyr, Austria before opening his own shop in 2016. Huber's kitchen knives have well thought out designs and efficient cutting geometry.
Vegetable cleavers are ideal for vegetables, noodles, and boneless meats. The thin edge geometry makes it a precision tool, rather than a replacement for a Western meat cleaver. The tall height is great for moving food from cutting board to the pot and ensures the knife will last many sharpenings.
The 8-1/3 inch blade is forged from Hubert's own san mai combining a 1.2419 carbon steel core with forge finished cladding. 1.2419 is a low-alloy tool steel containing tungsten and chromium. It achieves a working hardness of 64 Hrc and maintains high wear resistance. This makes it an excellent steel for kitchen knives and outdoor knives. The forge finish will help with food release. At 3-1/2 inches tall, this knife has lots of clearance over a cutting board. The spine and choil are nicely rounded for comfort. We recommend using camellia oil to protect the blade and natural wood handle.
The ambidextrous Japanese-inspired handle is a style called half-octagonal. The faceted top is matched with a rounded base for comfort. The handle combines chestnut wood with a bog oak bolster. Bog oak is a wood that has been buried in a bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown to almost black color. The combination of materials creates a dramatic handle that will hold up well even under professional use.
An edge guard is included to protect the edge when the knife is not in use.
