This blade is forged using a san mai (three layers) technique. Bill forged stainless steel to the sides of a 52100 carbon steel blade. The result is the exceptional edge holding of 52100 carbon steel with significantly easier care. Many knifemakers and users feel that 52100 is among the best steel -- if not the best -- currently used for knifemaking. The transition line between stainless steel and carbon steel is exceptionally dramatic. The top of the blade features a hand rubbed satin finish. Both the spine and choil are nicely rounded for a comfortable grip. The blade is particularly tall at 2.41 inches, giving it plenty of finger clearance and ensuring it will last a lifetime of use.
The handle is cocobolo wood secured to the tang using hidden tang construction. This prevents water from getting to the carbon steel tang and causing rust. Cocobolo is extremely dense and resinous making it perfect for holding up to the harsh demands of a professional kitchen. A silicon bronze spacer adds a bit of warmth in the transition of handle to bolster. The 416 stainless steel bolsters are carved to accommodate a comfortable pinch grip.
