Luis perfectly captured the essence of the Japanese sujihiki when he made this slicer. This high performance sujihiki is well suited to all sorts of slicing tasks in the kitchen. From slicing and portioning meats and fish to carving roasts, this knife is a perfect choice!
The damascus blade is forged from 1080 and 15N20 carbon steels to ensure excellent edge holding and chip resistance. The fine patterned mosaic damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin for clean, perfect cuts. The edges of the spine and choil are rounded for additional comfort.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
The Japanese inspired ambidextrous octagonal handle is stabilized thuya burl. Alternating spacers of black G-10 and brass will help the wood adjust to humidity and temperature changes. The handle feels great in your hand and will remain comfortable even after hours of use. Like other knives, this knife should not be put in the dishwasher.
