Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is hand ground AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L was designed for razors, which need corrosion resistance, high hardness, and very acute edges – not surprisingly, these requirements translate to chef’s knives as well. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. A hollow grind provides a thin cutting edge that will need less thinning over time. The spine and choil are nicely rounded to prevent sharp corners. Chloe's touchmark is on the left side of the blade and the Acre Forge mark is on the right side.
Curly koa handle scales are secured to the full tang using blue G-10 pins. Koa (Acacia koa) is a beautiful exotic wood that only grows on the Hawaiian Islands. With its tight curl, it is one of the most desirable woods in the world. Blue G-10 liners also add a touch of color. The chamfered handle provides a comfortable grip in a variety of positions. Like other knives, this knife should not go in the dishwasher.
