This custom chef's knife was made by Adam Andrews of Acre Forge. Adam has over 12 years experience as a knifemaker. He prefers to make Japanese-inspired knives.
The honesuki, which developed in the Kanto region of Japan (greater Tokyo area), is an all-purpose boning knife. It is a strong and sturdy knife, used to cut meat away from the bone, but not a cleaver for cutting through bones. It is ideal for de-boning poultry, seafood and pork. It also makes a great general purpose utility knife with finger clearance under the handle for chopping.
The ambidextrous blade is ground equally on both sides. It is forged from Adam's own san mai, combining a 52100 carbon steel core with A203 nickel steel cladding. Many knife users and knifemakers feel that 52100 is among the highest performing (if not the best!) steels currently used to make knives today. The spine and choil are nicely rounded for comfort. We recommend using camellia oil to protect the blade and wood handle.
The handle is inspired by the Japanese ambidextrous octagonal handle. The black walnut handle will hold up well to the harsh demands of a professional kitchen. Black, white, and tiffany blue spacers will help the wood adjust to humidity and temperature changes in the kitchen. This knife is sure to become a kitchen favorite when boning chickens and similar tasks! Like other knives, this knife should not be put in the dishwasher.
