The santoku is the traditional Japanese chefs knife. This comfortable design is a fantastic multipurpose chopper. The santoku style has quickly become the new favorite for chefs in the West. The 6-3/4 inch blade is easily controlled, while the tall blade gives plenty of finger clearance over a cutting board. From chopping to slicing and dicing, this will be your go-to knife.
The blade is convex ground by hand from AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort.
The Japanese-inspired octagonal handle offers a comfortable, ambidextrous grip. The handle is myrtle wood from a small mill in Tillamook, Oregon. The wood selected is a nice combination of light and dark tones with dramatic figure. A Hassui ceramic wood finish seals the handle protecting it from water.
