Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles) and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials. This meat cleaver will make quick work of heavy duty tasks in the kitchen.
Meat cleavers are ideal for chopping down large cuts of meat, light bones and hearty vegetables. Having a meat cleaver for heavier tasks ensures your primary knife used in the kitchen always stays in tip top shape. This cleave facilitates breaking down meat, tendons, and bone and is ideal for separating porch chops or breaking down a chicken.
The blade is hand forged 8670 carbon steel with a convex ground for edge strength. 8670 is extremely tough, even at relatively high hardness, and is used for swords, machetes, and other tools subject to hard use. The top of the blade features a forge finish with the bottom half of the blade featuring a hand rubbed satin finish. At almost 3 inches tall, this cleaver has lots of clearance over the cutting board to accommodate larger hands and ensuring the knife will last through many sharpenings.
The handle has an heirloom fit to the bolster and its shape is influenced by the classic axe handle, allowing an easy, forceful, and accurate swing and chop. The handle is premium hickory, following the axe handle motif. It is differentially flame charred for visual effect and increased hardness – charring is often used in hard-swung tools like axes and forging hammers. Then it is sanded to 1000 grit and finished with 20 coats of Birchwood-Casey TruOil. The contrast between the forge finish of the blade wih the meticulous workmanship of the handle, bolster, and blade grind makes this a truly exceptional piece. The contoured handle fills your hand and provides a comfortable grip.
