Description: This impressive chef's knife was made by Colorado bladesmith Jayden Simisky. Jayden began forging at 15 years old, having taught himself how to weld at only 10 years old. Simisky is a Forged in Fire champion (season 8, episode 16). At the 2023 Blade Show in Atlanta, GA, Jayden was honored to become a journeyman smith. He has been making knives for 8 years and been a full time knifemaker for over five. In his spare time, Jaden spends time in the outdoors walking slacklines thousands of feet in the air. He can also be found backcountry skiing, mountain biking, and more in the great outdoors. This chef's knife is among Jayden's masterpieces to date.
The large 10-2/3 inch blade is forged from Jayden's own Richter pattern damascus, combining 1084 and 15N20 carbon steels to ensure excellent edge holding and chip resistance. The complex pattern is extremely engaging and will have you staring at the blade for hours. The blade is ground exceptionally thin for clean, high performance cuts. The spine and choil are rounded for a comfortable pinch grip. We recommend using camellia oil to protect the blade and natural wood handle.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
The handle is sculpted from two-toned curly koa that combines sap wood and heartwood into a dramatic presentation. Koa (Acacia koa) is only found on the Hawaiian islands and is one of the most desired exotic woods used in knifemaking. A disco pattern damascus pommel is inlaid into the back of the handle. Showing Jayden's incredible attention to small details, this impressive chef knife uses take-down construction which allows the knife to be disassembled if extensive cleaning or maintenance is needed. An anodized titanium pin at the back of the handle can be removed to take the handle off the blade. A small custom damascus hammer with a rosewood handle and mild steel stand made by Jayden is included to remove the pin. Like other knives, this knife should not be put in the dishwasher.
A mild steel presentation stand was forged by Jayden to elegantly display the knife when not in use. This could easily be at the centerpiece of any kitchen!
