Description: The santoku is the traditional Japanese general purpose chefs knife. The FAXR2 stainless steel core is surrounded by damascus forged from layers of stainless steel and nickel. The FAXR2 core is produced by Nachi-Fujikoshi, the makers of SRS-13 and SRS-15 stainless steels. FAXR2 is Nachi-Fujikoshi's version of SG2 stainless steel. This high-performance PM steel is renowned for its excellent edge retention and corrosion resistance. With a hardness rating of Hrc 62 to 63, FAXR2 offers a fine grain structure that ensures outstanding edge sharpness and durability along with relatively easy sharpening. The superior edge retention of FAXR2 makes it a preferred choice for both professional chefs and knife enthusiasts. It combines reliable performance in a wide range of kitchen tasks. The blade boasts a high polish damascus, giving it a mirror-like appearance. The spine and choil are rounded and polished to remove any potential hot spots during use.
