Description: Mark Mostert is an exceptional bladesmtih from South Africa. He started making knives part time in 2019 and presented his work for the first time at the 2020 Brooklyn Knife Show in Pretoria, South Africa. From the start, damascus caught his eye and he began a never-ending quest for information surrounding damascus and forging. As time went by, he started experimenting and is one of a very small group of bladesmiths in the world capable of making copper san mai. Mostert brings skills that are far beyond the limited number of years that he has been forging. His work is currently significantly underpriced and I look forward to him gaining a significant international reputation.
This high-performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is great for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. This knife, with its deep belly, combines a German-influenced shape with a nimble Japanese edge geometry. From chopping to slicing, this will be your go-to knife.
Mostert began by forging the san mai blade. An 80CrV2 carbon steel core is surrounded by stainless cladding for easier care. Nickel set between the two steels helps prevent carbon migration. The combination of the dark steel with the bright stainless steel sides is particularly dramatic. 80CrV2 ensures a truly exceptionally keen, long-lasting edge. A Fujiwara-inspired finger notch makes this knife especially comfortable in a pinch grip.
Maple handle scales are attached to the full tang for strength and durability. They are fit nicely to satin finishes brass bolsters. The chamfered handle provides a comfortable grip with no hot spots. Like other knives, this knife should not be put in the dishwasher.
