Description: A slicing knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Slicing knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The premium aogami 2 carbon steel core is surrounded by damascus (mokume) forged from layers of copper, brass, and nickel. Blue steel (aogami) is a favorite of professional chefs due to the exceptionally long-lasting edge. The thin blade is distal tapered for optimal balance with a clean grind and no wedging. The spine and choil are rounded and polished to remove any potential hot spots during use. Because this knife is forged from carbon steel, we recommend camellia oil to protect it from rust and oxidation.
The octagonal "Wa" style handle is ambidextrous. Stabilized birch wood forms the ferrule and handle, separated by a polished synthetic spacer. Like other kitchen knives, this knife should not be put in a dishwasher.
Hatsukokoro Hayabusa Aogami 2 YuShoku chef’s knives combine high performance geometry with exceptional edge holding. These knives are a great choice for the cook who is looking for a world class carbon steel core with a dramatic mokume san mai.
