This American-made chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is a perfect choice when slicing vegetables and meats. The gentle curve of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 8 inches, this is among the most popular sizes for a primary chef's knife. It is large enough to get most any task done, yet short enough to do it with ease.
The blade is high performing, low care 154CM stainless steel and has an heirloom quality hand-rubbed satin finish. It was hardened and triple tempered to Rc 59-60 for excellent edge retention. It is convex ground for easy food release and provides a durable chip-resistant edge.
Purpleheart wood handle scales are set on the full tang for strength and durability. It features modified bamboo filework between the grips, which has been filled with black epoxy and polished. This gives the beauty of filework without the hassle of cleaning food particles out of it. A deep finger cutout for easy control when holding the knife in a pinch grip.
