Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles) and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials.
The kiritsuke gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is a perfect choice for your primary chef's knife. The triangular tip results in a detail-oriented, yet stronger tip than the gyuto. The long, straight spine is perfect for moving foods across a cutting board after chopping. The slim profile keeps the weight low and the balance right. The kiritsuke gyuto is a perfect choice to grab whether slicing onions, chopping parsley, mincing herbs, or dicing meats.
The san mai blade combines a 50100 carbon steel blade with wrought iron cladding. 50100 is similar to 1095 and 52100 carbon steel. The main difference is it has less chromium than 52100, but more than 1095 carbon steel. The core steel is hardened to 63 Hrc. The wrought iron cladding prevents the blade from becoming too brittle while providing the damascus-like pattern that wrought iron is known for. The spine and choil are nicely rounded for comfort. The blade is extremely thin for high performance cuts. Dale's touchmark is on the left side of the blade.
The Japanese-inspired octagonal handle is claro walnut. The premium wood selected has beautiful figure. A stabilized holly ferrule provides a nice contrast to the dark walnut wood. Gabon ebony along with white and black ebony spacers finish the handle.
Like other knives, this knife should not be put in the dishwasher.
