Description: Martin Huber hails from Austria and is considered one of the greatest chef knife makers from that region. His father, mother, and grandfather all had blacksmithing and metalworking experience which led to Martin learning the trade at a young age. Martin took four years of formal blacksmith instruction in his home town of Steyr, Austria before opening up his own shop in 2016. Martin's kitchen knives have well thought out designs and efficient cutting geometry.
The 9-1/3 inch blade is forged from a san mai combining an Apex Ultra cutting edge with damascus cladding combining 60 layers of copper and O2 carbon steel. Apex Ultra is a revolutionary new steel developed specifically for handmade knives. It has extremely high edge retention and it is particularly good at maintaining its toughness at high hardness, which makes it good for thin knives with superior cutting ability. It was designed by Larrin Thomas, Tobias Hangler, and Marco Guldimann. It is a low alloy design that is forgeable, forge-weldable, and its fine carbides make the steel relatively easy to sharpen. With its high purity and well-balanced alloy composition it has very high toughness in the 66+ HRC range along with excellent edge retention. A forge finish along the spine will help with food release. Both the spine and choil are nicely rounded for comfort. This knife has beautifully thin geometry for effortless high performance cutting.
The ambidextrous handle is a style often called a half-round in Japan. The lower half is rounded for comfort, whereas the top features three facets. Many people, both in Japan and abroad, feel this to be the most comfortable and versatile Japanese handle shape. Presentation grade ringed gidgee is combining with an ancient bog oak bolster. Gidgee (Acacia cambagei) is a member of the acacia family (same family as koa). It grows in arid regions of Australia resulting in dense, wood with a hardness similar to Arizona desert ironwood. The slow-growing gidgee may hang on for hundreds of years and produces one of Australia’s hardest and most durable timbers. Bog oak is a wood that has been buried in a bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown to almost black color. Alternating copper and carbon fiber spacers will help the natural wood adjust to humidity and temperature changes from the kitchen. Like other knives, this knife should not be put in the dishwasher.
An edge guard is included to protect the knife during storage.
