This high-performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is perfect for chopping and slicing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 6-3/4 inches, this nible knife is easy to control, yet will get most any task accomplished with ease.
The blade is hand forged damascus. 864 layers of steel were combined to create the intricate pattern. By combining 1084, 15N20, and 1095 carbon steels, Sam ensures a keen, long-lasting edge. Because this knife is made from carbon steel, we recommend using camellia oil to prevent rust. A Fujiwara-inspired finger notch encourages a pinch grip for greater control. The blade has tremendous, thin geometry and will effortlessly slice and chop. Reed's mark is on the right side of the blade.
The ambidextrous Japanese-inspired handle is a style called a half-round. The faceted top is matched with a rounded base for comfort. The bolster and handle are exhibition grade Australian ringed gidgee (Acacia cambagei). Gidgee is a member of the acacia family (the same family as koa). It grows in arid regions of Australia, resulting in dense wood with a hardness similar to Arizona desert ironwood. The slow-growing gidgee may hang on for hundreds of years and produces one of Australia’s hardest and most durable timbers. A fiber spacer adds a subtle contrast. The handle is comfortable in both a pinch grip and a full handle grip. Like other knives, this knife should not go in the dishwasher.
